1 Butternut Squash

1/4 inch squares Yellow Onion

1 inch slice Red Onion

1.5 inch slice Tomato

1.5 inch biased slice Eggplant & Zucchini

½ a Red Pepper

1 King Oyster Mushroom

⅓ cup Feta crumble

½ cup Balsamic

¼ cup Basil (minced)

Prep & Cooking:

  1. Thoroughly wash all vegetables

  2. Dice Yellow Onion into ¼ inch squares

  3. Cut red onion into a one inch cross section

  4. Cut off a ½ inch of the root and thinly slice the King Oyster Mushrooms lengthwise

  5. Remove the stem, seeds, and piff (inner white membrane) from the Red Pepper and divide into three large pieces

  6. Remove the skin and seeds from the Butternut Squash and cut in small squares (about ¾ inch) 

  7. Cut the Tomato into 1.5 inch thick slices

  8. Bunch the Basil together and chop into a fine mince

  9. Crumble the Feta into small pieces and mix with the chopped Basil

  10. In a pan on medium high heat, reduce the Balsamic Vinegar and sugar together for 3 to 4 minutes. (note that the mixture will always thicken when cooled)
